Place potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over high heat and cook until fork-tender. Drain and set aside.
In a large skillet, cook chopped bacon over medium-high heat until crisp. Transfer bacon to a paper towel-lined plate, reserving the drippings in the skillet.
Reduce heat to medium and cook diced onion in the bacon drippings until softened. Stir in apple cider vinegar, sugar, salt, pepper, and a splash of water. Bring to a boil.
Add the warm potatoes to the skillet and gently toss to coat. Cook for a few minutes, then stir in the cooked bacon and parsley. Taste and adjust seasoning as needed. Serve warm.
